Gluten-Free Beijing Fried Black Bean Noodles (炸酱面) 🫘

Known as “Beijing bolognaise”, this noodle dish is both pungent fragrant and irresistibly delicious. Make sure to keep your windows open to air out the fragrance of the greatest noodles that multiple countries have eagerly adapted to make their own.


Marinate pork 🥩 in a bowl for 15 min

🥩 6 oz ground pork or pork belly, chopped

🥣 1 tsp cornstarch

🧂 Pinch of salt, white pepper

 

Pan fry 🫘 bean sauces together for 1 min using oil already in the sauces. Scoop out the fried bean sauce, set aside, and leave the rest of the oil in the pan

🍯 2 tbsp GF sweet bean sauce

🫘 3 tbsp GF fermented black bean sauce

These are not Certified Gluten-Free. You’ll have to read the labels to ensure the your sauce doesn’t contain Wheat. I have used the ones linked above to make this sauce for celiac customers. You can purchase on our website if you can’t find them near you :)

 

Stir fry meat and veggies in remaining oil for 2-3 min

👩‍🦰 1 tsp ginger, minced

🧄 4 garlic cloves, minced

🍄 6 shiitake mushrooms, zucchini or carrot, chopped

 

Add seasonings and simmer for 15-20 min to reduce

🫘 Fried bean sauce from earlier

🥃 1 tbsp GF soy sauce

💦 1 cup water

 

Thicken the sauce and turn off heat.

🥣 2-3 tbsp cornstarch diluted in a bit of water to your liking

Noodles will thicken sauce as well so don’t thicken sauce too much.

 

Boil noodles and top with 🫘 black bean sauce

🥒 1 cup persian cucumber, julienned

🥬 Sprinkle of green onions, chopped

 

Plate and serve!
